Insects? Let's make them appetising

locustaInsects?... If we make them "sexy" then they will become a real alternative to today's consumption of animal meat. This is certainly not an explanation, but rather a provocation launched by 4ento.com, the Swiss portal dedicated to promoting entomophagy as a new frontier for a diet that is, first and foremost, sustainable.

In a video interview with foodnavigator.com, Ana Day, an expert in ecology and eco-economic sustainability, paints an interesting picture in which a great deal of marketing work will be at the centre of the development of new food diets based on different balances in terms of nutritional intake.

In this competition, it is to be expected that sooner or later the big food multinationals will also enter, because the entomophagy market is potentially enormous, characterised by rather high margins, at least in an initial phase.

The opportunities are the same as those of "fish & chips", a huge market like that of ready meals and snacks, with the advantage that the health benefits of insects appear proven, and in communication terms it should not be all that difficult to find the right ways to make these animals "sexy", and not just radical-chic as they are today in France, the European country that is seeing a fair spread of "edible insects", still limited however to a narrow circle of gastronomy adventurers.
